No-one has missed the furore surrounding celebrity chef George Calombaris and his MAdE Establishment company.

In July, the Fair Work Ombudsman (FWO) found that MAdE Establishment had underpaid 515 restaurant staff by AU$7.8 million in wages and superannuation. 

George Calombaris apologised and his firm has said it repaid the money to staff. Additionally, MAdE Establishment agreed to make a $200,000 contrition payment and George Calombaris committed to becoming an ambassador for the FWO. Along the way, George Calombaris lost a lucrative sponsorship deal and his professional reputation was undoubtedly damaged. It was a big price to pay.

When George was asked by journalist Leigh Sales, on ABC TV’s 7.30 Report, how it all came about, he said, “You’re running a million miles an hour, being creative, being someone that can inspire the team… and you assume at the back end, things are happening at the same speed – but they weren’t.”
